OREGON CULINARY INSTITUTE

Students at Oregon Culinary Institute in Portland, Oregon, receive highly intensive culinary training, including daily work in the kitchen and the study of specialized cuisines. Students also have the advantage of being part of a successful network of alumni chefs and other culinary professionals. Oregon Culinary Institute's academics consist of vocational diplomas in: * Culinary Arts * Baking and Pastry Arts * Restaurant Management Those in the Culinary Arts program first learn funda... mental techniques, including how to cook meats, vegetables and seafood and how to use culinary tools. In the more advanced stages of the program, students learn such intricate aspects of cooking as ethnic cuisines and complex sauces. The Restaurant Management program is also in-depth. Beginning students learn everything from the basics of food and beverages to how to interact with employees. In the final phases of the program, they generate a business plan for their first restaurant. Students in all programs get the chance to work in real-life situations. Those in the culinary and baking programs spend time cooking and baking at the school restaurant. All students do an externship at a local restaurant.
